Welcome to Old Wilson Ferments

Discover the Timeless Craft of Wild Fermentation

At Old Wilson Ferments, we are not just crafting cider; we are reviving a tradition. Nestled in the heart of Gales Creek, OR, our small handcrafted cidery is a bridge between the old and the new, a place where wild fermentation and old-world styles ferment seamlessly with modern innovation to create ciders that are truly unique.

Our Philosophy: Wildly Original, Rooted in Tradition

We believe in the wild magic of fermentation, the art of letting nature take the reins. Our ciders are the product of patience, the outcome of allowing natural yeasts to work their slow and intricate dance within our casks. By marrying these ancient methods with contemporary styles, each batch we produce is an expression of authenticity and creativity.

Our Ciders: A Symphony of Flavors

Our offerings are a reflection of our dedication to diversity and quality. From the bright, crisp notes of our Classic Apple to the bold, complex profile of our Barrel-Aged Reserve, every blend tells a story. PNW Farmed & Foraged

Our cider and wine is made from apples, berries, and grapes that come from a variety of local Oregon sources. Many come straight from our own beautiful Gales Creek farm in the foothills of the Oregon Coast Range. What we don’t grow and pick ourselves, we forage from local farms, our neighbor's trees, High Grove Estate, and the Harris Family Orchard. We seek out unique fruit, such as the 100-year-old apple trees that gave us the unique flavors of the single barrel Harris Orchard cider blend. From apples, pears, and grapes to medlar and tiny crab apples, we strive to bring you the most out of the ordinary flavors that capture the taste of the place and time they were grown, harvested, and fermented. Experience something unique with each bottle.

Uniquely Fermented

From press to barrel to bottle - our ciders are each hand-crafted with the flavors of the place, people, and time that they were grown, pressed, and fermented. Barrel-aged for a minimum of six months with some up to 2 years. We use a natural fermentation process that locks in the diverse terroir of each season. Our ciders and wine will leave your palette to ponder on the array of unique flavors of each bottle.
